First soup - Butternut squash

Believe it or not, we have never tried making soup... and I never thought my first would be a vegetable one. This soup consists mainly of squash along with some pear, onions and curry powder. Very thick and quite good! Next time we'll leave out the blob of sour cream though. It doesn't need it and why add the fat?

  1. Your first soup and you chose a more complex one, (all that blending!) I make lentil soup almost on a weekly basis here. I'll never buy a can of soup again, (plus they're not available here!).

  2. It's actually super easy, Rene. I couldn't believe how quick and easy. We got a Magic Bullet gizmo for Christmas and it blends in seconds.

    Is the lentil soup easy to make? Is there a picture of it on your blog?

    I'm getting quite a kick out of making things and not paying jacked up prices for store-bought, over-processed food. Plus, it feels good eating local produce. So - we had home-made soup and home-made bread. One day I'll branch out of white bread, once I find a recipe that works.

  3. Lentil soup is super easy to make. I usually use the red ones, as they cook the quickest. I just throw them in the pot before the veggies and cook them till they fall apart. For lentils that don't fall apart, try brown ones -they hold their shape better.

    I've made curried pumpkin soup a few times with the immersion blender, it was pretty messy and I had to cook the pumpkin forever because Turkish pumpkins are like wood! Also the first time I didn't reserve any liquid and veggies aside so it ended up like baby food, yours looks way more like soup!

    You're right when you say it makes you think twice about store bought food. Here in Istanbul, I can't readily get salad dressing, spaghetti sauce or anything frozen! But it's not hard to put these things together yourself, if you take the time. You're spoiled for ingredients in Victoria! The shops have EVERYTHING!!

  4. I think we cooked off too much of the liquid because ours is thicker than soup. Don't mind that though. Amazingly, I've never cooked lentils.
